Lemon Blueberry Cheesecake Bars

Ingredients:

For the crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the cheesecake filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 cup fresh blueberries

For the topping:

  • 1/4 cup fresh blueberries
  • 1 tbsp lemon juice
  • 1/4 cup granulated sugar

Instructions:

  1. Preheat your oven to 350°F. Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, mix together the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture evenly into the bottom of the prepared pan.
  3. Bake the crust for 8-10 minutes, or until lightly golden brown. Remove from the oven and set aside to cool.
  4. In a large bowl, beat the cream cheese and granulated sugar together until light and fluffy. Beat in the eggs, one at a time, then stir in the lemon juice and zest.
  5. Gently fold in the blueberries, then pour the mixture over the cooled crust, spreading it into an even layer.
  6. Bake the cheesecake bars for 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
  7. While the cheesecake bars are baking, make the topping. In a small saucepan, combine the blueberries, lemon juice, and granulated sugar. Cook over medium heat, stirring occasionally, until the mixture has thickened and the blueberries have burst.
  8. Remove the cheesecake bars from the oven and let cool completely. Drizzle the blueberry topping over the bars, then chill in the refrigerator for at least 2 hours before slicing and serving.
