Ingredients:
For the crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar

- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 1 cup fresh blueberries
For the topping:
- 1/4 cup fresh blueberries
- 1 tbsp lemon juice
- 1/4 cup granulated sugar
Instructions:
- Preheat your oven to 350°F. Line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, mix together the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture evenly into the bottom of the prepared pan.
- Bake the crust for 8-10 minutes, or until lightly golden brown. Remove from the oven and set aside to cool.
- In a large bowl, beat the cream cheese and granulated sugar together until light and fluffy. Beat in the eggs, one at a time, then stir in the lemon juice and zest.
- Gently fold in the blueberries, then pour the mixture over the cooled crust, spreading it into an even layer.
- Bake the cheesecake bars for 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
- While the cheesecake bars are baking, make the topping. In a small saucepan, combine the blueberries, lemon juice, and granulated sugar. Cook over medium heat, stirring occasionally, until the mixture has thickened and the blueberries have burst.
- Remove the cheesecake bars from the oven and let cool completely. Drizzle the blueberry topping over the bars, then chill in the refrigerator for at least 2 hours before slicing and serving.
