Quinoa And Black Bean Bowls With Avocado Cream
Quinoa and black bean bowls are a great high protein, healthy option that is very easy to prepare and is paired with a delicious avocado crème dressing. Here is the recipe below.
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, diced
- 1 jalapeño pepper, seeded and diced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- Salt and pepper to taste
For the Avocado Cream:
- 2 ripe avocados
- 1/4 cup plain Greek yogurt
- 1 garlic clove, minced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- Salt and pepper to taste
Directions:
- Rinse the quinoa in a fine-mesh strainer and add it to a medium-sized pot with 2 cups of water. Bring to a boil, then reduce the heat to low and cover the pot. Let simmer for 15-20 minutes, or until the quinoa is cooked and the water is absorbed.
- While the quinoa cooks, prepare the rest of the ingredients. In a large bowl, combine the black beans, diced red bell pepper, red onion, jalapeño pepper, chopped cilantro, lime juice, salt, and pepper. Mix well.
- To make the avocado cream, scoop the flesh of the avocados into a blender or food processor. Add the Greek yogurt, minced garlic, chopped cilantro, lime juice, salt, and pepper. Blend until smooth and creamy.
- Once the quinoa is cooked, add it to the bowl with the black bean mixture and stir to combine.
- To serve, divide the quinoa and black bean mixture among bowls. Top each bowl with a generous dollop of avocado cream. Enjoy!
