Quinoa And Black Bean Bowls With Avocado Cream

Quinoa and black bean bowls are a great high protein, healthy option that is very easy to prepare and is paired with a delicious avocado crème dressing. Here is the recipe below.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 jalapeño pepper, seeded and diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • Salt and pepper to taste

For the Avocado Cream:

  • 2 ripe avocados
  • 1/4 cup plain Greek yogurt
  • 1 garlic clove, minced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Directions:

  1. Rinse the quinoa in a fine-mesh strainer and add it to a medium-sized pot with 2 cups of water. Bring to a boil, then reduce the heat to low and cover the pot. Let simmer for 15-20 minutes, or until the quinoa is cooked and the water is absorbed.
  2. While the quinoa cooks, prepare the rest of the ingredients. In a large bowl, combine the black beans, diced red bell pepper, red onion, jalapeño pepper, chopped cilantro, lime juice, salt, and pepper. Mix well.
  3. To make the avocado cream, scoop the flesh of the avocados into a blender or food processor. Add the Greek yogurt, minced garlic, chopped cilantro, lime juice, salt, and pepper. Blend until smooth and creamy.
  4. Once the quinoa is cooked, add it to the bowl with the black bean mixture and stir to combine.
  5. To serve, divide the quinoa and black bean mixture among bowls. Top each bowl with a generous dollop of avocado cream. Enjoy!
